I'm not sure what you mean by "beyond primary literature". Will students
be reading the primary literature and seeing how doctors might use it?

At least the first of these should be understandable by upper undergrads,
but the others would be useful for the instructor.
If you are looking to do something that emphasizes more of the arts than
the sciences, you may find some good leads on the Medical Humanities site
that NYU has, which gives links to syllabi in areas such as Aging, Health
Care Policy, Medicine and the Arts, Social Issues in Medicine, and more.
